Classic Zucchini Bread
Ingredients (1 loaf)

1 ½ cups all-purpose flour

1 tsp baking soda

½ tsp baking powder
-
½ tsp salt
-
1 ½ tsp ground cinnamon

½ tsp ground nutmeg (optional)

½ cup vegetable oil (or melted butter)

¾ cup granulated sugar

½ cup brown sugar (packed)

2 tsp vanilla extract

1 ½ cups grated zucchini (don’t drain; lightly pat only if very wet)

½ cup chopped walnuts or pecans (optional)

½ cup chocolate chips (optional)
Instructions

Prep the Oven & Pan
Preheat oven to 350°F (175°C).
Grease a 9×5-inch loaf pan or line with parchment. -
Mix Dry Ingredients
In a bowl, whisk together: flour, baking soda, baking powder, salt, cinnamon, and nutmeg. -
Mix Wet Ingredients
In another bowl, beat eggs, oil, granulated sugar, brown sugar, and vanilla until smooth. -
Add Zucchini
Stir in the grated zucchini. -
Combine Mixtures
Add dry ingredients into the wet mixture and gently stir until just combined.
Fold in nuts or chocolate chips if using. -
Bake
Pour batter into the loaf pan and bake for 50–60 minutes, or until a toothpick comes out clean. -
Cool
Let cool in the pan 10 minutes, then transfer to a wire rack.
Tips for Perfect Zucchini Bread

Don’t overmix — it keeps the bread tender.

Add 1 tbsp lemon zest for brightness.

For extra moisture, add 2 tbsp applesauce or 2 tbsp Greek yogurt.
