* 3 eggs
* 2 cups Sugar
* 1 cup oil
* 2 cup raw grated zucchini
* 2 cups flour
* 1 teaspoon salt
* 1/4 teaspoon baking powder
* 1 1/2 teaspoon baking soda
* 1 tablespoon cinnamon
* 1/2 teaspoon ground nutmeg
* 1 cup chopped pecans or walnuts
* 2 teaspoons vanilla extract
* cream cheese frosting, below

In a large mixing bowl, blend eggs with sugar. Add oil and zucchini, stirring to blend well. Stir in remaining ingredients. Pour into a 12-cup microwave bundt pan, or use two 6-cup ring pans for the microwave. Microwave (HIGH) 8-10 minutes, rotating a quarter turn halfway through cooking.

Bread looks dry and begins to pull away from side when cooked. Cool 10 minutes in the pan. Invert breaad onto serving plate. Frost with cream cheese frosting when cool.
Makes l large or 2 small loaves. This bread freezes well. If using the 6-cup ring pans, microwave about 4-6 minutes each, rotating halfway through cooking. The zucchini bread recipe is ready to serve...enjoy !

* 3 eggs
* 1 cup vegetable oil
* 2 cups granulated sugar
* 2 cups grated zucchini
* 2 teaspoons vanilla
* 3 cups all-purpose flour
* 1 teaspoon salt
* 1 teaspoon baking soda
* 1 teaspoon baking powder
* 1 tablespoon ground cinnamon
* 1 teaspoon ground cloves
* 1 teaspoon ground allspice
* 3/4 cup wheat germ or chopped nuts
* 3/4 cup raisins or chopped dates, optional

Beat eggs until light and foamy; add vegetable oil, sugar, zucchini and vanilla. Mix lightly but blend thoroughly.
Mix together flour, salt, baking soda, baking powder, and spices; mix lightly. Add dry ingredients to first mixture, stirring to blend. Stir in nuts or wheat germ and raisins or dates, if using.
Pour batter into two loaf pans, 9x5x3-inches in size. Bake at 325° for 50 to 60 minutes, until a toothpick inserted near center of a loaf comes out clean.

* 1 cup walnuts or pecans, chopped
* 1 1/2 cups shredded zucchini (about 1 medium zucchini)
* 1/2 cup vegetable oil
* 1 cup granulated sugar
* 2 large eggs, lightly beaten
* 2 teaspoons vanilla
* 1/2 teaspoon baking soda
* 1/2 teaspoon ground cinnamon
* 1/2 teaspoon salt
* 1/4 teaspoon baking powder
* 1 1/2 cups all-purpose flour

Preheat oven to 350°. In a mixing bowl, combine oil, sugar, eggs, vanilla, baking soda, cinnamon, salt, baking powder.
With a hand mixer on medium speed, beat until ingredients are blended, or about 30 seconds. Add flour; mix until moistened.
Stir in nuts and zucchini. Pour batter into a greased and floured loaf pan. Bake for about 65 to 75 minutes, or until loaf tests done. The zucchini bread recipe is ready to serve...enjoy the bread !

* 3 1/4 cups all-purpose flour
* 1 1/2 teaspoons salt
* 1 teaspoon ground nutmeg
* 2 teaspoons baking soda
* 1 teaspoon ground cinnamon
* 3 cups sugar
* 1 cup vegetable oil
* 4 eggs, beaten
* 1/3 cup water
* 2 cups grated zucchini
* 1 teaspoon lemon juice
* 1 cup chopped walnuts or pecans


Preheat oven to 350 degrees F. In a large bowl, combine flour, salt, nutmeg, baking soda, cinnamon and sugar. In a separate bowl, combine oil, eggs, water, zucchini and lemon juice. Mix wet ingredients into dry, add nuts and fold in.
Bake in 2 standard loaf pans, sprayed with nonstick spray, for 1 hour, or until a tester comes out clean. Alternately, bake in 5 mini loaf pans for about 45 minutes. The zucchini bread recipe is ready...enjoy it !
